Hot Recipes for the Cold Season

Rosemary Green Superior

Ingredients for about 4 glasses (300ml each)

1 organic orange
6 sprigs rosemary
100ml water
900ml dry white wine
180ml orange liqueur
7 tablespoons maple syrup
4 Pyramid Bag EILLES TEE Tea Diamond® Green Tea Asia Superior

Preparation

  1. Wash orange under hot water, rub dry and cut into slices. Wash rosemary and shake dry.
  2. Put orange slices and rosemary in a saucepan. Add water, white wine, orange liqueur and maple syrup and bring to the boil once.
  3. Switch off the stove, add EILLES TEE Tea Diamond® Green Tea Asia Superior to the liquid and leave to steep for about 4 minutes. Remove Tea Diamond® and keep the punch warm until required.


Tips

To decorate, serve the glasses with sugared rosemary. Put 2-3 tablespoons of sugar on a plate and roll 4 washed, still damp rosemary twigs in it. Arrange one branch on the glass for each punch.

For larger quantities use loose EILLES TEE. For 4 glasses, put 10g EILLES TEE Green Tea China Leaf No. 76 into a tea filter.

Golden Winter Punch

Ingredients for 4 glasses (300ml each)

85g fresh ginger
1 red chilli pepper
18 cloves
3 tsp ground turmeric
400ml water
1000ml milk or almond milk
100g brown sugar
4 pyramid bags of EILLES TEE Tea Diamond® Rooibos Winter Punch
Ground turmeric for dusting

Preparation

  1. Peel the ginger and cut into thin slices. Clean the chilli pepper, cut lengthwise, wash and remove seeds. Put ginger, chilli pepper, cloves and turmeric into a tea filter, add water, milk and sugar to a pot, bring to the boil and simmer for about 4 minutes.
  2. Switch off the stove, add a EILLES TEE Tea Diamond® Rooibos Winter Punch to the pot and leave to stand for about 5 minutes. Remove the spice bag and Tea Diamond® and keep the punch warm until required.
  3. To serve, heat and froth some milk. Pour the punch into the glasses, add some foamed milk and sprinkle with turmeric.


Tips

For a variant with alcohol, pour about 5-10ml orange liqueur into a glass, pour in the punch and finish with milk foam.

For larger quantities use loose EILLES TEE. For 4 glasses, put 10g EILLES TEE Rooibos Winter Punch No. 10 into a tea filter.

Snowed-In Apple

Ingredients for 4 glasses (300ml each)

1000ml clear apple juice
1 packet bourbon vanilla sugar
180ml almond liqueur
4 pyramid bags of EILLES TEE Tea Diamond® Apple fruits
1 red-skinned apple
Juice of 1 lemon
250g whipped cream
Cinnamon for dusting

Preparation

  1. Place apple juice, vanilla sugar and almond liqueur in a saucepan and bring to the boil. Switch off the stove, add EILLES TEE Tea Diamond® Apple Fruits and leave to stand for around 10 minutes. Remove Tea Diamond® and keep the punch warm until required.
  2. Wash, quarter, core and dice the apples. Mix with lemon juice and keep ready to serve.
  3. When ready to serve, whip the cream until stiff. Pour the punch into the glasses, decorate with a dash of cream and sprinkle with cinnamon.

For larger quantities use loose EILLES TEE. For 4 glasses, put 10g EILLES TEE apple fruits no. 4 into a tea filter.

Cranberry Orange Punch

Ingredients for 4 cups (400ml each)

14 cardamom capsules
1 tsp black peppercorns
400ml fresh orange juice
1000ml cranberry nectar
180g dried cranberries
90g brown sugar
4 pyramid bags of EILLES TEE Tea Diamond® Vita Orange
Rock sugar sachet
1 organic orange for decoration (optional)

Preparation

  1. Lightly crush the cardamom capsules and peppercorns in a mortar and put them into a tea filter. Place in a pot with orange juice, cranberry nectar, cranberries and sugar. Bring to the boil and simmer for about 5 minutes.
  2. Switch off the stove, add EILLES TEE Tea Diamond® Vita Orange and leave to stand for around 10 minutes. Remove spice bag and Tea Diamond® and have punch ready until required. Serve with rock sugar for sweetening.


Tips

For a variant with alcohol, pour around 5-10 ml Spicy Rum into a glass, pour in punch and finish with milk foam.

For larger quantities use loose EILLES TEE. For 4 glasses, put 10g EILLES TEE Vita Orange No. 95 into a tea filter.
